Can you get rid of the dog smell?
Usually, but not by cleaning the surface. The odour is in the foam and needs a treatment that reaches it, which is a different quote from a clean.
Is fabric protector worth it?
On a new or freshly cleaned sofa in a house with children, yes: it buys time to blot a spill before it becomes a stain. On an old sofa it is money spent on the wrong thing.
